Aioli

Make this garlicky sauce to pair with everything from fries to paella.

Ingredient

  • 4 garlic cloves, finely chopped
  • 1/2 teaspoon kosher salt, plus more as needed
  • 2 egg yolks
  • 1 1/2 tablespoons fresh lemon juice
  • Pinch of saffron threads (optional)
  • 1 cup olive oil
  • Pinch of cayenne pepper
Direction

Using the flat side of a chef's knife on a cutting board, crush garlic and salt into a paste. Transfer to a bowl with egg yolks, lemon juice and saffron and whisk to blend. Slowly whisk in olive oil in a steady stream until a creamy sauce forms. Season with more salt as needed and cayenne pepper.
