Take the best produce of summer produce and chop up a salad of apple and rice.
Ingredient
1/2 cup white long-grain rice
2 tbsp extra-virgin olive oil
1 tbsp white wine vinegar
1 baby cos lettuce
1 large pink lady apple, quartered, cored, roughly chopped
1 celery stalk, trimmed, halved
1/4 cup sultanas
Direction
Cook rice in a saucepan of boiling water following packet directions until tender. Drain. Place on a tray. Cool.
Place oil and vinegar in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
Remove outer leaves and core from lettuce. Separate leaves. Wash. Pat dry with a tea towel. Roughly chop. Place lettuce, apple, celery and sultanas in a bowl. Add dressing. Toss to combine. Serve.
