Chimichurri

When a dish needs something to spruce it up, a few spoonfuls of this fragrant sauce made with heaps of parsley and four entire cloves of garlic is all you need.

Ingredient

  • 1/4 cup parsley, coarsely chopped
  • 3 tablespoons red wine vinegar
  • 4 large garlic cloves, minced (2 1/2 tablespoons)
  • 2 tablespoons fresh oregano leaves
  • 2 teaspoons crushed red pepper
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/2 cup extra-virgin olive oil
Direction
  1. Gather the ingredients.
  2. Combine parsley, vinegar, garlic, oregano, and crushed red pepper in a food processor. Process until smooth; season with salt and pepper. Transfer sauce to a bowl and pour olive oil over mixture. Let stand for at least 20 minutes before using.
