Super simple, easy on the budget and stacked with hidden vegetables this turkey pasta bake is the perfect midweek dinner all the family will love.
Ingredient
1 tsp olive oil
1 medium onion, coarsely grated
3 cloves garlic, crushed
2 medium carrots, coarsely grated
1 medium zucchini, coarsely grated
240g turkey breast mince
400g Coles Canned Diced Tomatoes
145g dried pasta, elbow variety
2 tsp fresh thyme, finely chopped
60g mozzarella, grated
Fresh thyme sprigs, extra, to serve
Direction
Preheat oven to 180°C. Heat oil in a large saucepan over medium-high heat. Cook onion, garlic, carrot and zucchini, stirring, for 5 minutes or until softened. Add mince and cook, breaking up any lumps with a spatula, for 5 minutes.
Add tomatoes. Fill tomato can three-quarters full with water and add water to pan. Season with salt and pepper. Stir in pasta and thyme until well combined.
Transfer pasta mixture to an 8-cup (4L) capacity baking dish and sprinkle with cheese. Bake for 35 minutes or until cheese is golden and bubbling and pasta is cooked through. Stand for 5 minutes. Serve sprinkled with the thyme sprigs.
