Free-form mango and raspberry trifle

This no-bake dessert is ready in 15 minutes.

Ingredient

  • 300ml thickened cream
  • 1 tbsp icing sugar
  • 150g Coles Brand Frozen Raspberries, partially thawed
  • 425g can Coles Brand Mango Slices in Syrup
  • 4 x 2cm-thick slices Coles Brand Madeira Cake
  • 2 tbsp flaked almonds, toasted
Direction
  1. Use an electric mixer to beat the cream and sugar in a small bowl until firm peaks form. Reserve 1/4 cup of the raspberries to decorate. Place remaining raspberries in a small bowl and lightly crush with a fork. Gently fold raspberries into cream until just combined.
  2. Drain mango, reserving 2 tablespoons of syrup. Place cake on plates and drizzle with reserved mango syrup. Top with mango slices and raspberry cream. Arrange reserved raspberries on top. Sprinkle with almonds.
