Give the traditional elements of Christmas a modern twist with this elegant roast potato side.
Ingredient
1kg King Edward or other floury potatoes, peeled, chopped
1/2 cup (125ml) extra virgin olive oil
1 cup (80g) grated parmesan
1/4 cup (40g) semolina
10-12 thyme sprigs
Direction
Preheat the oven to 190°C.
Place potato in a pan of cold, salted water over medium heat. Bring to a simmer and cook for 10-12 minutes until almost tender. Drain, then return to the pan and shake vigorously over medium heat to dry out and rough the edges.
Pour 1/4 cup (60ml) oil in shallow roasting pan, then place in the oven to heat.
