This restaurant business is a tough game so far…
The Flying Banzini isn’t supposed to make a profit in the first three months at least. No problem there. We’ve managed this par of the plan perfectly.
I am confident that we will get there. The main thing we are lacking is experience. I have never run a restaurant. My partner Raelene has never run a restaurant. And, my General Manager Raye Ann has never managed a restaurant. There is a steep learning curve for all of us.
We have the key ingredients in place – namely, customers who seem to very much enjoy the Flying Banzini experience. We have management who have risen to the challenge of learning as fast as we can. We have a kitchen team that is producing marvelous roast meats, sandwiches, and pizzas. And, we have the cheesecake… oh the cheesecake. This means that we do not have a BIG problem – we have a small problem. Namely, how do we slightly reduce costs and slightly increase revenue. That’s all it will take. We are almost there. But, man, when you don’t know what you are doing it’s a tough puzzle to solve.

Totally unsolicited advice and something you probably already know, but in my experience in the restaurant trade the key to success is 2 things:
1) portion control
2) food reuse (yesterdays fresh fish goes into to todays fish soup, etc.). Nothing gets thrown out.

I really liked my dining experience. Good food, great atmosphere and the price is right. I think maybe more explanation is needed about the food ticket you receive once you pay and how your food gets delivered to your table. Perhaps a holder could be placed on the table for the food ticket, that way the server would not have to walk around calling out names.
Personally, I would like the option of being able to sit down and read the menu before going up and placing my order.
I do not know whether it’s just me or if perhaps everyone else experiencing problems with your blog.
