A funny conversation at closing time…

A few weeks ago I am closing up shop. It’s a Sunday night at 9:15 PM. There are two tables still lingering so, of course, the lights are on, etc. A young couple wanders in. I meet them at the door and the following conversation occurs…

Me: I am really sorry. We are closed. I can serve you cheesecake and a drink if you like but the kitchen is closed.

Customer: You’re closed? It’s pretty early for a restaurant to close?

Me: We have experimented with our closing time and we find that we do almost no business after 9 PM so we have decided that this is the best time for us to close.

Customer: (slightly indignant) Oh. So it’s for business reasons that you close at 9?

Me: Well… yes.

 

I did not really know what to say.

 

I have tweaked our hours one more time. We have been staying open until 10 PM on Friday and Saturday but there is almost no business after 9 PM. So I have decided that the kitchen will close at 9 PM, seven days a week. This means that I ask my customers to have their food orders placed by 9 PM. You are welcome to stay until 10 PM. And, on Friday and Saturday nights we will stay open until 10 PM for cheesecake and beverage.

Your hours (and reason for them) sound perfectly reasonable.
